- 1 tbsp butter
For the Creamy Sauce
- 3 tbsp butter
- 4 cloves garlic, minced
- 1 small shallot, finely chopped
- ½ cup dry white wine (or broth)
- 1 ½ cups heavy cream
- ½ cup grated Parmesan
- 1 lemon (zest + juice)
- ½ tsp chili flakes (optional but delicious!)
- ½ tsp paprika
- Salt & pepper, to taste
- Fresh parsley, chopped
- Extra Parmesan for serving

1. Boil the Pasta
Bring a large pot of salted water to a boil. Add the pasta and cook until al dente. Reserve ½ cup of pasta water before draining.
2. Sear the Seafood
Heat olive oil and 1 tbsp of butter in a large skillet over medium-high heat.
Add seafood, season with salt and pepper, and sear until opaque and lightly golden (about 2 minutes per side).
Transfer to a plate don’t overcook!
3. Build the Aromatics
In the same skillet, melt 3 tbsp butter. Add garlic and shallots and sauté until fragrant and translucent, about 2 minutes.
4. Deglaze With Wine
Pour in the white wine and scrape the bottom of the pan with a wooden spoon to release all those beautiful browned bits. Simmer 2–3 minutes until reduced.
