- 1 tablespoon olive oil
- 1 pound ground beef
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 2 tablespoons taco seasoning
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup corn kernels
- 2 cups cooked rice
- 1½ cups shredded cheddar cheese
- Salt and pepper to taste
- Fresh cilantro and lime juice for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add onion and cook until soft and translucent.
- Stir in garlic and bell pepper and cook until fragrant.
- Add ground beef and cook until browned.
- Season with taco seasoning, salt, and pepper.
- Stir in diced tomatoes, black beans, and corn.
- Fold in cooked rice and simmer for 5 minutes.
- Top with shredded cheese, cover, and let melt.
- Finish with lime juice and fresh cilantro before serving.
Notes
This skillet is very flexible. Swap ground beef for turkey, add jalapeños for heat, or serve with tortillas or chips. Store leftovers in the fridge for up to 4 days or freeze for later.
