Creamy cream cheese and sour cream melt into tangy buffalo sauce, then I fold in shredded chicken and lots of cheese for the bubbliest, cheesiest bake. Serve it warm with chips, celery, crackers, or toasted baguette—everyone hovers around the dish until it’s gone.

  • 2 cups cooked shredded chicken
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup buffalo sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 tsp garlic powder
  • 2 green onions, chopped (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a small baking dish (about 8×8 inches) or a similar-size oven-safe dish.
  2. In a medium bowl, mix the softened cream cheese, sour cream, buffalo sauce, and garlic powder until smooth and creamy.
  3. Fold in the shredded chicken and half of the cheddar and mozzarella cheeses until evenly combined.
  4. Spread the mixture into the prepared baking dish and smooth the top.
  5. Sprinkle the remaining cheddar and mozzarella evenly over the top.
  6. Bake for 25 minutes, or until hot, bubbly, and the cheese is melted.
  7. Remove from the oven and garnish with chopped green onions. Serve warm with chips, celery sticks, crackers, or bread.

Notes

Adjust the buffalo sauce to match your heat preference (start with 1/3 cup for mild, go up to 2/3 cup for extra spicy). For a bold, classic finish, add 1/4 to 1/2 cup blue cheese crumbles either folded in or sprinkled on top before baking. To make ahead, assemble the dip (without baking), cover, and refrigerate up to 24 hours—then bake as directed, adding 5 extra minutes if it’s cold from the fridge. Store leftovers in an airtight container for up to 3 days and reheat in the microwave in 30-second bursts or in a 350°F oven until warm.
