- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup enchilada sauce
- 2 tablespoons taco seasoning
- 2 cups shredded Mexican blend cheese
Instructions
- Preheat oven to 375°F and grease a baking dish.
- Brown ground beef in a skillet over medium heat.
- Add onion and garlic and cook until soft.
- Stir in taco seasoning, tomatoes, beans, corn, and enchilada sauce.
- Transfer mixture to baking dish and top with cheese.
- Bake for 30–35 minutes until bubbly and golden.
- Let rest 5 minutes before serving.
