Description

Ingredients

  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup corn kernels
  • 1 can diced tomatoes, drained
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 box cornbread mix
  • 1 cup milk
  • 1 large egg
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 375°F.
  2. Brown ground beef with onion and garlic in a skillet.
  3. Stir in corn, tomatoes, and seasonings.
  4. Transfer mixture to a greased baking dish.
  5. Sprinkle cheese evenly over the beef layer.
  6. Prepare cornbread batter with milk and egg.
  7. Pour batter over the casserole.
  8. Bake for 30–35 minutes until golden.

Notes

You can prepare this casserole ahead of time and bake later. Store leftovers in the refrigerator for up to 4 days. Swap ground beef with turkey or add jalapeños for spice.
