Description

This easy beef and veggie bowl is a cozy, comforting meal made with savory ground beef and colorful vegetables. Perfect for busy weeknights, it comes together quickly and tastes like a warm hug in a bowl.


Ingredients

  • 1 lb ground beef (85/15)
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, sliced
  • 1 cup zucchini, chopped
  • 1 cup carrots, sliced
  • 3 tablespoons soy sauce or tamari
  • Salt and black pepper to taste
  • Cooked rice for serving

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onion and cook until soft and fragrant.
  3. Stir in garlic and cook for 30 seconds.
  4. Add ground beef and cook until browned, breaking it apart.
  5. Season with salt and pepper.
  6. Add carrots and bell pepper and cook for 4–5 minutes.
  7. Add zucchini and cook until tender.
  8. Pour in soy sauce and stir well.
  9. Simmer for 2–3 minutes, then serve over rice.

Notes

You can substitute ground turkey for a lighter version. Store leftovers in the fridge for up to 4 days. Reheat gently with a splash of water.
