- 1 lb ground beef (85/15)
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, sliced
- 1 cup zucchini, chopped
- 1 cup carrots, sliced
- 3 tablespoons soy sauce or tamari
- Salt and black pepper to taste
- Cooked rice for serving
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced onion and cook until soft and fragrant.
- Stir in garlic and cook for 30 seconds.
- Add ground beef and cook until browned, breaking it apart.
- Season with salt and pepper.
- Add carrots and bell pepper and cook for 4–5 minutes.
- Add zucchini and cook until tender.
- Pour in soy sauce and stir well.
- Simmer for 2–3 minutes, then serve over rice.
Notes
You can substitute ground turkey for a lighter version. Store leftovers in the fridge for up to 4 days. Reheat gently with a splash of water.
